The estate vineyards comprise 14
hectares of high-quality vineyards dedicated to Chianti
Colli Aretini DOC. In 2000, the winery launched a
vineyard re-structuring programme, adopting the most
up-to-date practices, a necessary foundation for
producing wines of absolute quality.
Such vineyard management practices, which feature winter
pruning, canopy management, and cluster thinning, have
made possible a high-quality viticulture with low yields.
This philosophy, in conjunction with a modernised cellar,
has yielded a new wine, beginning with the 2001 vintage,
OCCHINI IGT, a Tuscan red wine. Occhini represents the
perfect union between tradition, exemplified in its
fermentation, and innovation, displayed in its barrique
maturation. The reception and tributes it received gave
it a place among Tuscany’s best red wines and provided
the impulse, in the 2004 vintage, to produce our
BERNARDINO Chianti DOCG.
For its production, optimally ripe grapes undergo
fermentation with ambient yeasts in glass-lined cement
vats. The malolactic fermentation occurs in barriques
and large oak botti, where the wine matures for some 12
months. The wine is then bottled in the villa’s
underground cellars, composed of massive 15th-century
walls and vaulted ceilings. |
